p-p-pick up a pancake
although i’ve been ill lately, my spirits were cheered by a lovely mail from bernie and some yummy pancakes
in the last year or so, i’ve grown fond of indulging in pancakes all year round, thanks to lemon, milis and lemonjelly. i feared that a downside of this would be that pancake tuesday would slightly lose its appeal. however, i forgot that nobody could compete with my mammy’s home cooking
i only managed 4.5 this year which is pathetic compared to last year’s magnificent 7, but i had a sick note…
it’s a bit late for this, but in case anyone has a craving for a pancake here’s her recipe:
ingredients:
- 16 ozs plain flour
- 4 ozs caster sugar
- 4 large eggs (use 5 if using smaller organic ones)
- 1 litre / 2 pints milk
method:
- sift flour into bowl using sieve
- add the sugar
- mix it up using a wooden spoon
- break in all your eggs
- add the milk and whisk using electric whisk
- you know it’s ready when it’s all mixed together and there are air bubbles on the top
- leave the bowl in the fridge with a towel over it for at least an hour
- then your mixture is ready for you to make the most delicious pancakes ever - enjoy!

4.5 beats my pathetic 3……….but I did have mine with HB vanilla ice cream, which makes them somewhat more filling!!

Then again I’m doing the whole lent thing, so I can have them whenever I want.
Whatever happened to the “don’t forget the panckaes on Jif lemon day” adds?? Did I just miss them, or have they stopped showing them.

aw poor fence! in fact most people i know did not get any pancakes - it’s a national disgrace - i await the primetime investigation!
3 filled pancakes is fairly impressive caoimhe. i just don’t like anything diluting the sugar mountain i put on each one of mine 
i think they renamed jif lemon day, cif lemon day and it just didn’t work
