although i’ve been ill lately, my spirits were cheered by a lovely mail from bernie and some yummy pancakes

in the last year or so, i’ve grown fond of indulging in pancakes all year round, thanks to lemon, milis and lemonjelly. i feared that a downside of this would be that pancake tuesday would slightly lose its appeal. however, i forgot that nobody could compete with my mammy’s home cooking i only managed 4.5 this year which is pathetic compared to last year’s magnificent 7, but i had a sick note…

it’s a bit late for this, but in case anyone has a craving for a pancake here’s her recipe:

ingredients:

• 16 ozs plain flour
• 4 ozs caster sugar
• 4 large eggs (use 5 if using smaller organic ones)
• 1 litre / 2 pints milk

method:

• sift flour into bowl using sieve
• add the sugar
• mix it up using a wooden spoon
• break in all your eggs
• add the milk and whisk using electric whisk
• you know it’s ready when it’s all mixed together and there are air bubbles on the top
• leave the bowl in the fridge with a towel over it for at least an hour
• then your mixture is ready for you to make the most delicious pancakes ever - enjoy!
